    Prepare the vegetables by peeling and chopping them into bite-sized pieces.

    Roast or air fry the chopped vegetables for 20 minutes.

    Cook the orzo pasta according to package directions.

    Make the dressing by blending parsley, garlic, tahini, yogurt, and a little water in a food processor until smooth and spoonable.

    Fry the halloumi slices until golden brown on both sides.

    Combine the cooked orzo with the roasted vegetables. Season with salt and pepper.

    Mix the orzo and vegetables until the pasta turns a glorious pink color from the beetroot.
