Directions

    Preheat oven to 425F convection (or 450F regular bake). Line baking sheet with wire rack and spray with oil.

    Pound chicken breasts to 1/4-inch thickness. Season with salt and pepper.

    Dredge chicken in flour, then egg, then breadcrumb mixture. Place on wire rack.

    Spray chicken with oil and bake for 12-15 mins at 165F internal temp. Option to broil for 1-2 mins.

    Spray a separate baking sheet with oil. Spread marinara and mozzarella on it and bake in the oven beneath chicken for 7-10 minutes.

    Transfer the cutlets onto plates, top with cheese and sauce, and serve with freshly grated parmesan.

  • 0.2 cup Panko Breadcrumbs
  • 0.2 cup Italian Breadcrumbs
  • 0.2 cup Grated Parmesan
  • 1 Avocado Oil Spray or Olive Oil Spray
  • 24 oz Marinara Sauce
  • 2 cups Shredded Mozzarella
  • 1 serving Freshly Grated Parmesan
