    Cut the chicken breast into slices, but not all the way through.

    Cut two baking sheets in half, fold them into a boat shape, and tie the ends with string.

    Place orange and lemon slices and thyme in the baking sheet boats.

    Place the chicken breast on top of the fruits and herbs.

    In a bowl, mix olive oil, honey, salt, pepper, and orange juice to make the sauce.

    Pour the sauce over the chicken and bake at 180°C (356°F) for 25 minutes.

    After baking, spread some of the reserved sauce over the chicken, add more thyme, and grate some lemon zest on top.
