Directions

    Rough chop broccoli.

    Add broccoli, diced onions, garlic, and butter to the crockpot.

    In a measuring cup, mix cornstarch and chicken broth.

    Pour the cornstarch mixture into the crockpot.

    Add enough chicken broth to cover the broccoli.

    Cook on low for four hours.

    Shred cheddar and gouda cheeses using the kitchen aid mixer.

    After three hours, add heavy whipping cream to the broccoli soup.

    Use immersion blender to thin the soup.

    Add shredded carrots.

    Add half of the shredded cheese and stir until melted. Then add the other half and stir until melted.

    Cook for another 30 minutes.
