Directions

    Remove the stalks from the chillies and chop them up nice and small.

    Finely slice some red onion.

    Peel and slice some garlic cloves.

  4. 4.

    Pick some fresh thyme.

  5. 5.

    Press the chillies, onion, garlic and thyme into a jar.

  6. 6.

    Cover with honey.

  7. 7.

    Stir everything together.

  8. 8.

    Cover everything with more honey as needed.

    Leave to ferment for at least two weeks.
