1Add one head of shredded iceberg lettuce to a bowl.
2Add one cup of sliced salami.
3Add one can of drained and rinsed chickpeas.
4Add one cup of mozzarella cheese and one thinly sliced red onion.
5In a mason jar, mix together a quarter cup of red wine vinegar, a third of a cup of extra virgin olive oil, two teaspoons of Dijon mustard, a pinch of salt, a pinch of black pepper, and a quarter cup of parmesan cheese.
6Pour the dressing over the salad ingredients in the bowl and mix well.
7Add a little bit of extra parmesan cheese and a couple cracks of black pepper.
