Spread half of the grated cheddar, parmesan, and mozzarella over the potatoes. 9. Add the remaining potato mixture and cheese. 10. Top with the reserved caramelized onions. 11. Fold the edges of the pastry over the filling. 12. Brush with egg wash. 13. Bake at 210°C for 45-50 minutes. 14.
