Directions

    Finely slice 2 brown onions.

    Place 2 tbsp olive oil in a saucepan with the sliced onions and a pinch of salt.

    Cook on medium heat, covered, for 3 minutes, stir, and cook for another 3 minutes.

    Remove the lid and cook for 10-15 minutes until caramelized.

  5. 5.

    Thinly slice 2 large Desiree potatoes.

  6. 6.

    Combine sliced potatoes, ¾ of the caramelized onions, melted butter, thyme, salt, and pepper.

    Place the pastry on baking paper and arrange the potato mixture in a circle, leaving a 3cm border.

    Spread half of the grated cheddar, parmesan, and mozzarella over the potatoes.

    Add the remaining potato mixture and cheese.

    Top with the reserved caramelized onions.

    Fold the edges of the pastry over the filling.

    Brush with egg wash.

    Bake at 210°C for 45-50 minutes.

    Meanwhile, prepare the salad by combining sliced red onion, parsley, lemon juice, olive oil, and seasoning.

    Serve the tart in slices with the salad.
