Directions
- 1Finely slice 2 brown onions.
- 2Place 2 tbsp olive oil in a saucepan with the sliced onions and a pinch of salt.
- 3Cook on medium heat, covered, for 3 minutes, stir, and cook for another 3 minutes.
- 4Remove the lid and cook for 10-15 minutes until caramelized.
- 5Thinly slice 2 large Desiree potatoes.
- 6Combine sliced potatoes, ¾ of the caramelized onions, melted butter, thyme, salt, and pepper.
- 7Place the pastry on baking paper and arrange the potato mixture in a circle, leaving a 3cm border.
- 8Spread half of the grated cheddar, parmesan, and mozzarella over the potatoes.
- 9Add the remaining potato mixture and cheese.
- 10Top with the reserved caramelized onions.
- 11Fold the edges of the pastry over the filling.
- 12Brush with egg wash.
- 13Bake at 210°C for 45-50 minutes.
- 14Meanwhile, prepare the salad by combining sliced red onion, parsley, lemon juice, olive oil, and seasoning.
- 15Serve the tart in slices with the salad.
