Directions

    Add diced white onion to a pan and cook until it gets a little color.

    Add in lean ground beef, one taco seasoning packet, and chop it all up.

    When the meat is almost done cooking, add in red enchilada sauce, fat free cheddar, minced garlic, and mix to melt the cheese.

    Throw together a chipotle sauce with 0.5 cup Greek Yogurt, 0.25 cup Light Mayo, 2 Tbsps Minced Chipotles, and 0.5 Tbsp Garlic Salt. Mix until smooth.

    Assemble with a low calorie tortilla, spanish rice, cooked beef, chipotle sauce, nacho cheese and fill it all into a burrito.

    Melt some cheese on a pan, place the burrito seam side down on it, let it crisp up a little bit, and then roll it all over.

    Wrap the burritos in aluminum foil, place them in the freezer and enjoy.

  • 2 oz taco seasoning packets
  • 0.5 cup red enchilada sauce
  • 500 g fat free cheddar cheese
  • 2 Tbsps minced garlic
  • 1.5 cups dry white rice
  • 1.5 cups chicken bone broth
  • 1 cup tomato sauce
  • 1 Tbsp garlic salt
  • 0.5 Tbsp cumin
  • 0.5 Tbsp chili powder
  • 0.5 Tbsp oregano
  • 1.2 cups nacho cheese sauce
  • 10 low calorie tortillas
  • 0.5 cup Greek Yogurt
  • 0.2 cup Light Mayo
  • 2 Tbsps Minced Chipotles
  • 0.5 Tbsp Garlic Salt
