Directions

    Finely chop two cups of frozen raspberries.

    Put the chopped raspberries back in the freezer.

    In a bowl, mix 3 cups of all-purpose flour, 1 cup of sugar, and 4 tsp of baking powder.

    In a separate bowl, mix 2/3 cup of oil, 2 large eggs, 1 tbsp of pure vanilla extract, and 1 cup of buttermilk.

    Add the zest of one lemon to the wet mixture.

    Combine the wet and dry mixtures.

    Fold in the frozen raspberries one cup at a time.

    Divide the batter into 12 muffin cups.

    Bake at 400F for 23 minutes, or until a toothpick comes out clean.
