Directions

    Cook sausage in a pot with some bacon grease until rendered down, then remove and set aside.

    Season chicken with salt and pepper, then cook in the same pot until browned.

    Add chopped onion, bell pepper, and celery to the pot and cook until softened; this is the Holy Trinity of vegetables.

    Add minced garlic and cook for another 30 seconds.

    Stir in tomato paste.

    Add a whole can of cream of chicken soup and mix well.

    Add pasta, cooked sausage and chicken to the pot along with their drippings.

    Pour in 4 cups of chicken broth.

    Season with dry thyme and Creole seasoning.

    Add two bay leaves, bring to a boil, reduce heat to a simmer, cover, and cook for about 15 minutes.

    Remove bay leaves.

    Stir in a generous amount of chopped green onions.

    Mix well and serve.
