Slice onions and scallions, and cut chicken thighs into bite-sized pieces.

In a pan, heat together water, hondashi, soy sauce, sake, mirin, and sugar.

Once it comes to a simmer and the sugar is dissolved, add the onions and chicken. Let it simmer until chicken is fully cooked (about 8-10 minutes).

Add sliced scallions.

Lightly beat two eggs and slowly pour them on top. Cover with a lid for about a minute until the eggs are fully cooked.

Serve on top of a bowl of hot short-grain rice and garnish with shredded nori.
