1Add the cottage cheese and vanilla to a high speed blender. Blend until very smooth.
2Melt the chocolate. Add the chocolate to a microwave-safe bowl with the coconut oil. Heat in 30 second intervals, mixing after each interval until smooth.
3Add the cottage cheese and melted chocolate to a mixing bowl, and quickly fold the ingredients together until well mixed. Add the cocoa powder and fold it in, then whisk until smooth.
4Add the mousse to a few small dishes and refrigerate for 1-2 hours.
