Directions

    Blanch the duck by pouring boiling water over it.

    Dry the duck with paper towels.

    In a Mason jar, mix soy sauce, brown sugar, honey, gochujang, sesame oil, rice wine vinegar, and orange juice.

    Place the duck on a sheet pan and cover it inside and out with the sauce.

    Refrigerate the duck uncovered overnight.

    The next day, poke holes in the duck skin using a meat tenderizer.

    Place the duck on a wire rack in a smoker or oven at 275 degrees.

    Baste the duck with the sauce every 30 minutes.

    Cook until the duck reaches an internal temperature of 145 degrees in the thickest part of the breast.
