Directions

    Add 24oz of lean ground beef to a hot pan, chop it up and add in a taco seasoning packet.

    Once the ground beef is completely cooked, add in 1/4 cup of red enchilada sauce, 1 cup of fat free cheddar and mix it all in until completely combined.

    To make our rice, add 1/2 cup of white rice to a pot along with 1 cup of chicken bone broth and simmer for 15 minutes.

    Once the rice is done cooking, add in chopped cilantro, a squeeze of fresh lime juice and mix it all in until completely combined.

    Assemble the quesoritto by taking a low calorie tortilla, adding 2 tablespoons of nacho cheese to the middle, spreading it out, adding another low calorie tortilla on top and pressing it down.

    Add a quarter of our cooked rice on top of the tortillas along with a quarter of our cooked ground beef, a drizzle of non fat greek yogurt or light sour cream, fold the edges over and roll everything into a burrito.

    Add the burrito to a hot pan and toast on both sides until golden brown.
