Directions

    Set the pan on medium heat with some oil.

    Fry three diced potatoes. Season with salt and pepper and cook until golden brown (about 8 minutes).

    Remove the potatoes from the pan.

    In the same pan, cook one pound of chorizo, breaking it down with a masher.

    Add one serrano pepper and half a small white onion. Cook for about two minutes.

    Add two Roma tomatoes and cook for about a minute.

    Add the cooked potatoes back into the pan and mix.

    Add 7 oz of Oaxaca cheese. Cover and let it cook until cheese melts (about 3 minutes).
