    Mix flour, softened butter and powdered sugar into pie dough, type dough into an 8x8 pan, and bake for 15 to 20 minutes until firm.

    Press the dough into an 8x8 pan, making sure to build up the edges.

    In a bowl, slightly beat two eggs, add granulated sugar, baking powder, salt, lemon juice and lemon rind. Mix with a hand mixer until well combined.

    Pour the lemon curd over the hot crust and bake for 15 to 20 minutes, until the filling is firm.

    Sprinkle with powdered sugar.

    Let cool completely in the refrigerator.
