Directions

    Heat olive oil in a large skillet over medium heat. Add onions, white wine, and salt. Raise heat to high until wine evaporates.

    Lower heat to medium-low; add herbes de Provence and pepper. Cook for 30 minutes, stirring occasionally, then add garlic. Cook another 30 minutes until onions are caramelized.

    Add spaghetti and hot beef broth to the skillet. Raise heat to medium-high and simmer until the spaghetti loosens enough to mix (about 5 minutes).

    As broth evaporates, add hot water, mixing and simmering until pasta is nearly al dente (12-15 minutes).

    Add cheese and cook on low or off the heat, mixing until melted. Add butter and parsley, then mix. Taste and add more salt if needed.

  • 8 ounce cubed Swiss cheese or gruyere
  • 2 tbsp butter
  • 1 head chopped parsley
