Sweet Potato Cornbread
Directions
- 1Add one cup of mashed sweet potatoes to a bowl.
- 2Add one-third cup of milk to the mashed sweet potatoes.
- 3Add one package of Miss Lena's Cornbread mix to a bowl.
- 4Add one-half cup of sugar to the cornbread mix.
- 5Add three eggs to a bowl.
- 6Add the eggs to the cornbread mix.
- 7Add one cup of whole milk to the bowl.
- 8Whisk everything together.
- 9Add one stick of melted butter to the batter.
- 10Add the sweet potato purée.
- 11Mix until fully incorporated.
- 12Add two drops of orange food coloring (optional).
- 13Pour batter into a buttered baking dish.
- 14Tap on the counter to remove air bubbles.
- 15Bake at 350 until golden brown, about 40-45 minutes.
- 16Top with a little more butter.
