Grate the butter on a microplane and place it in the freezer for about 10 minutes.

In a bowl, mix together all-purpose flour, baking powder, and salt.

Add in the cold butter.

Add in cold buttermilk in two batches, mixing until a dough forms. Do not add all at once to avoid creating a wet dough.

Fold the dough onto itself four to five times, using a rolling pin and a bench scraper to shape it into a rectangle.

Cut the dough into eight even pieces.

Brush with egg wash and bake at 375F for 35 minutes.
