Place sweet potato noodles in a bowl of warm water to soak and set aside.

In a large pot, add cabbage, daikon, kosher salt, and water; bring to a boil, then simmer for 5 minutes.

Add the onion, mix, and simmer for another 5 minutes.

Add the beef and garlic, mix, and simmer for 5 more minutes.

Mix gochujang and soy sauce with some broth, stir into the pot. Add tofu and enoki mushrooms, then simmer for 5 minutes.

Drain the sweet potato noodles and add them to the pot with scallions and vinegar. Simmer for 5 more minutes.

Taste and adjust seasoning with gochujang or soy sauce.

1 bunch Scallion
2 Tbsp Rice Vinegar
