1Cook chicken sausage in a pan with olive oil for 8 minutes.
2Add orzo and garlic to the pan. Add a bit more olive oil and toast the orzo for 1 minute. Add chicken broth, coconut milk, and seasonings. Bring the orzo to a boil and then cover and reduce to a simmer. Cook for 10 minutes.
3Add spinach and parmesan cheese. Mix well and serve.
