Directions

    Add a whole head of garlic cloves, three bay leaves, two spoons of chicken bouillon, and a whole onion to a pot of boiling water.

    Add four chicken breasts to the boiling water.

    Add four chile poblanos, four chile serranos, four garlic cloves, and ten tomatillos to an air fryer at 400°F for five minutes.

    Remove the ingredients from the air fryer after five minutes.

  5. 5.

    Put the poblano peppers into a ziploc bag to steam for easy peeling.

  6. 6.

    Rinse the hominy.

  7. 7.

    Remove the chicken, onion, garlic, and bay leaves from the pot.

    Peel the poblano peppers and remove the seeds.

    Add the tomatillos, garlic cloves, serranos, cilantro, oregano, cumin, salt, black pepper, and chicken broth to a blender. Blend until smooth.

    Add the hominy and shredded chicken to the pot with the broth.

    Add the blended sauce to the pot.

    Bring to a simmer, then add more salt to taste.

    Serve with cabbage, radish, a bit more serrano, oregano, and lime.
