1Whisk together peanut butter, coconut milk, maple syrup, sriracha, sesame oil, soy sauce, a pinch of salt, pepper, garlic, ginger, and lime juice in a large bowl. Set aside.
2Heat a cast iron pan over medium-high heat for 2-3 minutes. Thread 4 tofu cubes onto each small skewer.
3Add oil to the pan and sear the tofu, seasoning with salt and pepper. Sear on all sides until golden brown, about 1-2 minutes per side.
4Pour half the peanut sauce over the tofu in the pan. Continue to flip and sear for another 1-2 minutes per side.
5Serve tofu skewers over rice and top with remaining peanut sauce, cilantro, scallions, crushed peanuts, sesame seeds, and chili crisp oil.
