Directions

    Dice onion and bell pepper.

    Add olive oil to dutch oven. Add diced onion, bell pepper, garlic, paprika, cumin, oregano, and salt.

    Add canned diced tomatoes, tomato sauce, tomato paste, and chicken stock. Mix well.

  4. 4.

    Place mixture on grill in dutch oven.

  5. 5.

    Use 80/20 ground chuck and 3 hot Italian sausages. Remove from casings, season with the same mix as chili, and mix together.

    Form a large, flat patty. Place on a wire rack on top of the dutch oven, and smoke for a few hours.

    Remove from grill, crumble into pieces, and put it back into the chili.

    Add kidney beans and pinto beans.

  9. 9.

    Continue cooking everything together until ready.

    Plate and finish with Fritos, cheese, sour cream, and scallions.
