Directions

    Peel and grate 800g Maris piper potatoes, submerge in cold water for 5 minutes, then strain.

    Squeeze out as much liquid as possible from the potatoes using a clean cloth.

    In a pan, cover the potatoes with oil and season with salt, pepper, 2 cloves of garlic, a handful of thyme and a handful of rosemary.

    Cook on a low heat for 20-25 minutes without coloring the potatoes, just soften them.

    Strain the oil from the potatoes, but keep it for later.

  6. 6.

    Mix the potatoes with 2-3 tbsp of cornflour.

    Shape the mixture into small rectangular shapes either by hand or using moulds and set in the freezer for 40-45 minutes.

    Fry the shaped potatoes in the previously kept oil until they are golden, crispy, and delicious.
