Directions

    Dice half an onion, one celery stalk, one green bell pepper, one quart of tomato and five Andouille sausage links.

    Cook the sausages until they are charred and set aside.

    Add a tablespoon of oil to the pan and cook down the vegetables.

  4. 4.

    Add 1 tsp chili powder, 1 tsp Cajun seasoning, 1.5 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, and salt.

    Add 2 cups of washed jasmine rice and mix well to soak up the flavor.

    Add in the diced tomatoes and the cooked sausages.

  7. 7.

    Pour in 3.5 cups of chicken stock, reduce the heat, cover and simmer.

    Garnish with green onions.
