Directions

    Put all ingredients in a stand mixer and mix until it clumps together. Stop immediately, do not overmix.

    Push the dough together with your hands, and divide it in half.

    Sprinkle the surface with plain flour and rice flour, then roll out to approximately 5mm.

    Use a circular cookie cutter to cut the dough into biscuits.

    Arrange the biscuits on a lined baking tray and prick them all over with a fork.

    Bake in a preheated oven at 160°C for 15 minutes. They shouldn’t go brown.

    Remove from the oven and let it cool on a wire rack. Dust with caster sugar.
