Directions

    Place the boursin cheese in the middle of a large baking dish.

    Add the orzo, sun-dried tomatoes, garlic, and seasonings around the boursin.

    Pour the vegetable stock over everything.

  4. 4.

    Add the oil from the sun-dried tomato jar.

  5. 5.

    Cover and bake at 425 degrees for 10 minutes.

    Remove from oven, stir, and add shredded cheese and spinach.

  7. 7.

    Cover and bake for another 2-3 minutes until the orzo is cooked and the stock is absorbed.

  • 2 cups uncooked orzo
  • 3 garlic cloves, chopped fine
  • 1 cup jarred sun-dried tomatoes, chopped
  • 2 tbsp sun-dried tomato oil
  • 1 boursin cheese
  • 4 cups vegetable stock without salt
  • 2 cups spinach
  • 1.5 cups white cheddar, shredded
  • 0.5 tsp red pepper flakes
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.2 tsp salt
  • 0.2 tsp pepper
