Directions

    Start with a healthy amount of oil in a pan. Add a diced onion and allow it to soften.

    Add a green chili with seeds.

    Toast the spices (cumin, turmeric, coriander powder) and add a pinch of salt.

    Cook the spices for a few minutes.

    Add minced garlic.

    Add a chopped tomato and water or some veggie stock.

  7. 7.

    When bubbly and gorgeous, crack in your eggs and add more salt.

    Pop the yolks and start mixing it all in at a nice gentle heat.

    Spread out some gentle dollops of liquid cheese and slightly smear it in.

    Add some chopped green onions.

    Serve with pita bread.
