Directions

    Dice 24 ounces of lean steak into 1-inch cubes.

    Transfer the steak to a bowl and add garlic salt and black pepper. Mix everything together.

    Add the seasoned steak to a hot pan and cook on both sides until golden brown.

    Add 1 tablespoon of light butter, 1 tablespoon of minced garlic, and parsley flakes. Cook for another 2 minutes until the steak is completely coated.

    Peel 24 ounces of russet potatoes and dice them into even cubes.

    Add the potatoes to boiling water and cook for about 5 minutes.

    Transfer the potatoes to a lined baking sheet.

    Top the potatoes with 1 tablespoon of olive oil, garlic salt, smoked paprika, and onion powder. Mix them all together and bake at 400 degrees for 35 minutes.

    For the sauce, combine 1 cup of Greek yogurt, 1 chipotle pepper, 1/3 cup of adobo sauce, 2 garlic cloves, and 2 tablespoons of milk.

    Blend everything together until completely smooth.
