Directions

    Combine 8oz of turkey sausage and 8oz of lean beef. Season with salt, garlic, onion, smoked paprika, black pepper, and rubbed sage.

    Form the mixture into six equally sized patties and set aside.

    In a bowl, whisk together 200g egg whites, 2 eggs, 100g blended cottage cheese, 5g nutritional yeast, 1tsp corn starch, salt, pepper, and garlic.

    Pour the egg mixture into a sheet pan lined with parchment paper and bake at 400 for 8-10 minutes.

    Cook the sausage patties on high heat until nicely browned.

    Top each sausage patty with a slice of low-fat cheese.

    Once the sheet pan eggs are cooked, cut them into six equal pieces.

    Prepare spicy mayo by mixing 90g light mayo, 15g Gochujang, 15g sriracha, a splash of white wine vinegar, salt, and pepper.

    Assemble the sandwiches: spread spicy mayo on the bottom bun, add the egg, sausage, and cheese, and top with the other bun.
