Directions

    Chop 2 small onions and 2 carrots using a vegetable chopper.

    Drain and rinse 2 cans of cannellini beans.

    Brown 1.5 pounds of sweet Italian sausage in a Dutch oven.

    Once the sausage is cooked, remove it and add 2 tablespoons of olive oil to the pot.

    Add the chopped onions and carrots and cook until softened.

    Add 3 cloves of minced garlic and cook until fragrant.

    Add 2 tablespoons of tomato paste and stir to combine.

    Add 8 cups of chicken broth, a pinch of dried thyme, pepper, salt, and 2 bay leaves.

    Add the cooked sausage and beans.

    Cover and simmer for about 30 minutes.

    Add 1 pound of ditalini pasta and cook until tender.

    Top with freshly grated parmesan cheese.
