Directions

    Throw some butter into a food processor.

  2. 2.

    Add the fermented chillies, garlic and thyme.

  3. 3.

    Add a generous drizzle of fermented honey.

  4. 4.

    Add a generous pinch of sea salt.

  5. 5.

    Blitz everything together until the chillies and garlic have turned the butter a reddish-orange colour.

  6. 6.

    Taste it and add more honey if you're feeling it.

    Serve it up with another good drizzle of honey and some more of those fermented chillies and garlic over the top.
