    Marinate the chicken with soy sauce, sake, mirin, sesame oil, garlic, ginger, salt, pepper, and egg white. Give them a Chinese massage and set aside.

    For the sauce, combine mayo, Thai sweet chili sauce, Sriracha, and lemon juice.

    Coat the chicken in potato starch and deep fry until golden brown and crispy.

    Add the chicken to the sauce and toss well to combine.
