Directions

    In a measuring cup, mix 1.5 cups of warm water, 2.25 teaspoons of yeast and 2 tablespoons of brown sugar. Set aside for 5 minutes.

    In the bowl of a stand mixer, add 4.5 cups of flour, 2 teaspoons of salt and mix them together.

    Add the yeast mixture and 0.25 cup of oil to the bowl. Mix on low for 5 minutes.

    Remove the dough from the mixer. It should be smooth and not stick to your hands.

    Lightly oil a large bowl. Place the dough in the bowl, seam side up, and cover with plastic wrap. Let rise for about an hour.

    Punch down the dough and lightly flour a surface. Cut the dough into 12 equal pieces.

    Shape each piece into a pretzel. Boil 6 cups of water and 2 tablespoons of baking soda on the stove.

    Preheat oven to 450°F.

    In a small bowl, whisk together an egg and a little bit of milk for the egg wash.

    Dip each pretzel into the boiling baking soda water for 15 seconds. Place them on a parchment-lined baking sheet.

    Brush each pretzel with egg wash and sprinkle with coarse salt.

    Bake for 10 minutes, or until golden brown.
