Directions

    Chop the onion, carrot, and celery. You can use a food processor for this, or do it by hand.

    In a heavy-bottomed pot, melt the butter. Then add the onions and cook for a few minutes, until softened.

    Add the carrot and celery and season with salt and pepper. Cook for a few minutes until softened.

    Add the ground beef and pork and cook, breaking it up.

    Add two cups of whole milk.

    Let the liquid cook out completely, about 20 minutes.

    Add two cups of dry white wine.

    Let the wine cook down, about 20 minutes.

    Add a scrape of nutmeg and a 28-oz can of crushed tomatoes.

    Simmer for 3 hours on the lowest heat. Add water if it starts drying out.

    Add a sprig of thyme.

    Cook pasta separately in salted boiling water. Add pasta to the sauce when almost done.

    Add a little pasta water and a knob of butter. Toss well to coat.
