Directions

    Cook bacon until crispy. Remove bacon from pot and leave 2 tbsp of bacon grease.

    Sauté onion, shallot, garlic, rosemary, sage, nutmeg, paprika, turmeric, salt, and pepper until onions have softened.

    Add chicken broth, sweet potatoes, and 1/2 cup of half & half. Cover and simmer for 20 minutes until sweet potato has softened.

    Scoop out 1 1/2 cups of sweet potatoes, blend the rest of the soup until smooth, and add the sweet potato chunks back in.

    Stir in the rest of the half & half and the gruyere cheese.

  6. 6.

    Serve with bacon crumbles, more Gruyere, and freshly chopped rosemary.

  • 1 yellow onion
  • 2 shallots
  • 8 slices bacon
  • 1 garlic clove
  • 1 tbsp fresh rosemary
  • 0.5 tbsp sage
  • 0.2 tsp nutmeg
  • 0.5 tsp paprika
  • 0.2 tsp turmeric
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp flour
  • 4 cups chicken or vegetable broth
  • 1 cup half & half
  • 1 cup gruyere cheese
