Directions

    Dice two potatoes into small cubes and saute them in a pan with a drizzle of olive oil until nicely browned.

    Add a cup of water, cover, and let them boil for about 10 minutes until soft.

  3. 3.

    Add one packet of Al Kasieh chopped tomatoes (or two chopped fresh tomatoes) and cook for a couple of minutes. Season with salt and a lot of black pepper.

    Turn off the heat. Crack four eggs into the pan and mix everything thoroughly.

    Cover and cook on low heat for 5 minutes until eggs are set.

    Finish with a drizzle of olive oil and more black pepper.
