Directions

    Mix washed tomatoes with olive oil and salt in an oven proof dish.

    Chop the garlic bulb and place it face down in the middle of the tomatoes.

    Roast in the oven at 190°C for 30-40 minutes, until soft and juicy.

    Remove the garlic and roast it separately in foil for 15 more minutes.

  5. 5.

    Add drained borlotti beans to the tomato mixture, stir to combine.

  6. 6.

    Tear basil and mix it through, then squeeze roasted garlic and mix it through.

    Serve in bowls, top with burrata, drizzle olive oil and pepper, and serve with crusty bread.
