    Roast the red pepper in the oven.

    Pat the fish fillets dry with paper towels.

    Prepare the jerk seasoning by blending roasted red pepper, garlic, scallions, onions, thyme and water.

    Season the fish fillets with the jerk mixture.

    Sear the fish fillets in a pan with olive oil until golden brown.

    In the same pan, sauté the chopped onions, peppers, and scallions.

    Add the blended jerk mixture to the pan.

    Pour in the coconut milk and bring to a simmer.

    Add the broccoli to the sauce and cook until tender.

    Add the seared fish fillets to the sauce.
