Roasted Red Pepper Jerk Fish

Directions

  1. 1Roast the red pepper in the oven.
  2. 2Pat the fish fillets dry with paper towels.
  3. 3Prepare the jerk seasoning by blending roasted red pepper, garlic, scallions, onions, thyme and water.
  4. 4Season the fish fillets with the jerk mixture.
  5. 5Sear the fish fillets in a pan with olive oil until golden brown.
  6. 6In the same pan, sauté the chopped onions, peppers, and scallions.
  7. 7Add the blended jerk mixture to the pan.
  8. 8Pour in the coconut milk and bring to a simmer.
  9. 9Add the broccoli to the sauce and cook until tender.
  10. 10Add the seared fish fillets to the sauce.
  11. 11Serve the fish over mashed potatoes and garnish with fresh parsley.
