Directions

  1. 1.

    Soak 8 oz of rice noodles in hot water for 10 minutes.

    Dice one yellow onion.

    In a frying pan set to medium heat, add 1 tbsp avocado oil and saute diced onions for 3 minutes.

    Add in 3-4 cloves of minced garlic and 1 tbsp of fresh ginger.

    Cook for 2-3 minutes.

    Add in 2 cups of chopped cauliflower and 1 chopped bell pepper.

  7. 7.

    Add 3 tbsp of red curry paste and cook for 5 minutes.

    Add in 1 can of full fat coconut milk, 1/2 cup of vegetable broth, and 2 tbsp of soy sauce.

    Add 2 tbsp of peanut butter, salt and pepper to taste, and cook for 3-5 minutes.

    Add in 2 cups of spinach and 1/2 cup of bean sprouts.

  11. 11.

    Add 1/4 cup of cilantro and the soaked noodles. Cook for 3-5 more minutes.

    Top with lime and sriracha.
