Directions

    Season short ribs with salt.

    Coat short ribs in flour, shaking off excess.

    Sear short ribs in neutral oil until golden brown on all sides.

    Rough chop onion, celery, and carrots.

    Add chopped vegetables to the pot and stir.

    Add a whole head of garlic.

    Pour in a whole bottle of red wine (Cabernet Sauvignon recommended).

    Add a box of stock, black peppercorns, brown sugar, and fresh herbs.

    Add seared short ribs to the pot.

    Bring to a bubble, cover, and bake at 350°F (175°C) for 3 hours.

    Remove short ribs and strain out the remaining ingredients.

    Reduce sauce by half while whisking, then finish with a knob of butter.

    Serve short ribs over mashed potatoes and broccolini, drizzled with red wine sauce.
