Directions

    Dice yellow onion and broccoli.

    Add diced onion and broccoli to a pan with spinach, salt, pepper, and chili powder.

    Add precooked chicken to the mixture.

    Transfer everything to a casserole dish and add a layer of shredded cheese.

    In a bowl, whisk together Greek yogurt and enchilada sauce.

    Pour the sauce over the casserole dish and top with cheese.

    Bake in a preheated oven at 400F for 10-15 minutes, until the cheese is melted.

    Let it rest for 5 minutes and garnish with cilantro, avocado and jalapeno.
