    Add a knob of butter to a pan.

    Finely slice three onions and add them to the pan with butter. Cook on medium-high heat for 15 minutes, stirring occasionally until lightly golden.

    Add three tablespoons of flour and mix well.

    Slowly add the milk to the pan, stirring until fully absorbed.

    Cook the 500g macaroni for 5 minutes until half cooked.

    Grate 100g cheddar, 100g raclette and 100g parmesan cheese.

    Add the grated cheeses to the milk mixture and stir.

    Add a teaspoon of English mustard and a teaspoon of mango chutney.

    Add a cup of starchy pasta water to the cheese sauce, stir and take off the heat.

    Add the half-cooked macaroni to the cheese sauce and toss gently.

    Add two dashes of Worcestershire sauce.

    Pour the mac and cheese mixture into an ovenproof dish and bake at 200 degrees Celsius (400 Fahrenheit) for 30 minutes.

    While mac and cheese bakes, prepare pan gratin: chop bacon into small pieces and cook until lightly golden. Add a handful of thyme and two cloves of garlic. Once golden, stir in breadcrumbs and continue cooking until golden and crunchy.

    Top the baked mac and cheese with the pan gratin and serve.
