Directions

    In a skillet over medium-high heat, brown 1 lb of ground beef. Add all seasonings and chopped onion.

    Once beef is cooked through and onions are softened, drain any grease from the skillet.

    Add Rotel, tomato sauce, minced garlic, beef broth, and uncooked rice to the skillet. Stir well, cover, and cook on medium-low heat for 15-20 minutes, or until the rice is cooked. Stir once halfway through.

    Remove the lid, fluff the rice, and top with shredded cheddar cheese.

    Put in the oven to melt cheese.

    Serve with sour cream, cilantro, and tortilla chips.
