Directions

    In a large pot, heat olive oil and butter. Add onion, celery, carrot, salt, pepper, Italian seasoning, and red pepper. Saute for 5-7 minutes until tender.

    Add Italian sausage and cook until no longer pink.

    Add tomato paste and cook for 2 minutes.

    Sprinkle in flour and stir. Cook for 1-2 minutes to cook out the raw taste.

    Deglaze with white wine and cook for 2 minutes.

    Pour in crushed tomatoes and chicken broth. Season with salt and pepper.

    Add Parmesan rind and bay leaf. Simmer uncovered for 20-30 minutes.

    Remove Parmesan rind and bay leaf. Add tortellini and spinach. Simmer for 3-4 minutes until tortellini is tender.

    Pour in heavy cream and Parmesan cheese. Stir until creamy.

  • 2 cups spinach
  • tortellini
  • 1 cup Parmesan cheese
  • fresh basil
  • red pepper
