High Protein Chicken Salad Cucumber Rolls

Directions

    Shred 1 lb of cooked chicken.

    Finely dice 1/2 red onion and soak in 2 cups of water for 10 minutes, then drain.

    Chop a handful of cilantro and cube 1 avocado.

    Blend 5 tbsp cottage cheese, 3 tbsp mayo, 1 tbsp onion powder, juice of 3 limes, a handful of cilantro, salt and pepper for the dressing.

    Combine chicken, onion, cilantro, and avocado in a bowl.

    Add the dressing and toss.

    Thinly slice a large cucumber using a peeler.

    Lay cucumber slices on parchment paper, slightly overlapping.

    Spread 2 tbsp of whipped cream cheese over the cucumbers.

    Add 4 oz of the chicken salad, leaving space on the sides, top with onion and avocado slices.

    Roll the cucumber tightly, fold the toppings in and press down to pack it.
