Directions

    Heat up some oil on medium heat. Add the minced garlic and sauté for 30 seconds.

    Add the dried oregano, salt, pepper, sundried tomatoes and tomato paste. Mix and cook down for 1 minute.

    Add the chickpeas, veggie broth/water and coconut milk. Season with salt and pepper. Let it simmer for 5 minutes.

    Add the spinach and stir until wilted.

    Serve and garnish with chopped chives.
