Directions

  1. 1.

    In a wooden bowl, sift together 1 1/2 cups cake flour, 1 1/3 cups all-purpose flour, 1/2 tsp baking soda, 3 tsp baking powder, 1/2 tsp salt, and 1 tsp cinnamon. Set aside.

    In a glass bowl, combine 1/3 cup vegetable oil, 1 cup + 1 tbsp sugar, 6 whisked eggs, 6 tbsp melted butter, 1/3 cup sour cream, 1 cup buttermilk, and 1 1/2 tsp vanilla extract.

    Slowly add the dry ingredients to the wet ingredients until a batter forms.

    Add 1 1/2 cups of blueberries (previously coated in flour) and the zest of one lemon to the batter and mix.

    Pour the batter into a muffin tin lined with muffin liners.

    Top the muffins with sugar.

    Bake at 425°F for 20-25 minutes, or until golden brown.
