Bacon Egg & Cheese Breakfast Burrito

Directions

    Make the frittata: In a bowl, mix eggs, egg whites, cottage cheese, chopped bell peppers and onions, turkey bacon and seasonings.

    Add to an oven-safe pan or baking sheet. Add laughing cow wedges and bake at 400 for 20-25 minutes.

    Cook bacon at the same time. Remove bacon halfway, drain grease, flip and add back to cook.

    Make a quick sauce: Mix light sour cream or Greek yogurt, hot sauce, smoked paprika, garlic and onion.

    Take the frittata out of the oven, sprinkle with bacon, and slice into six pieces.

    Assemble the burritos: Add sauce to the bottom of a tortilla, add a slice of frittata (broken into pieces), turkey bacon, more sauce and roll.

    Repeat the process six times. Toss in the freezer or fridge and heat up when ready to eat.

  • 200 g blended cottage cheese
  • 4 slices turkey bacon
  • 0.5 tsp salt
  • 2 bell peppers
  • 1 onion
  • 60 g light sour cream or Greek yogurt
  • 60 g hot sauce
  • 1 smoked paprika
  • 1 garlic
  • 1 onion
  • 6 burrito tortillas
  • 6 slices turkey bacon
